u should only use guinaifen ult when enemies already inflicted with burn. so either use the nihility resonance beforehand, or use skill first

More reliable method: Phase One, use Hoarfrost Stomp / Icerind hatchet / Frozen Needle ( or hurl freezing pots ). Alternate fire pots / fire based weapon e.g. Blasphemous Blade. Dodge her attacks, let the fire and ice do their thing and strike when you can. Phase Two summon spirit ash (Latenna is good cos she’s well away from Malenia’s waterfowl stuff) and use a bleed weapon whilst she’s on the ground doing her flower thing - good opportunity for stance break.
