Pistachio Baklava
Hey everyone, it’s been a while but I have a few videos coming up.
Today I’m showing you how I make Baklava.
Who doesn’t love baklava?
I have never l posted this before, as I could never get it quite right.
My pastry always curled once the syrup was on. And it looked awful.
So I asked a question on Turkish Food Travel (a brilliant page on RUclips) and she explained why she uses hot syrup, not cold. So I tried it and it is the best baklava I’ve ever made. And contrary to popular belief it does stay crispy.
This is also a really easy recipe thanks to the easy buttering method; which I first saw Maureen Abood do.
Enjoy :)

Hi everyone, I’ve been so busy with work I haven’t made many videos lately. But I’m going to try and do some for you. The sound is a bit muffled, I think my phone is on the way out, so apologies for that. But I have a new phone due any day. Eliopita - Cyprus Olive Cake
Просмотров 3,5 тыс.3 года назад
This is eliopita a delicious Cyprus olive cake. It can be made as a bread, which I also do. But the cake version is much quicker to put together. And very tasty. Many people add sesame seeds to this, but I add sunflower seeds and they add a nice crunch. I think this is vegan, if you grease the tin with plant based butter or oil. Enjoy the video, even though my voice over sounds a bit muffled in...
Youvetsi - ultimate comfort food
Просмотров 1,1 тыс.3 года назад
So youvetsi is my favourite pasta dish. This is a slow cooked lamb casserole with orzo pasta. The meat here is so tender. It’s summer here in London, but the weather was so miserable I had a craving for this! I do just want to say a couple of things, when I talk about browning the meat, I rarely brown meat, I honestly don’t think it makes much difference. But if you want to then you should. Als...
Tomato Gemista - perfect summer food

Greek stuffed tomatoes. This is the vegetarian/ vegan version. There are so many different ways of making gemista. Pre cook the filling or don’t pre cook the filling. Stove top or oven. Which herbs to use. The biggest thing for me is the rice used. I am not a fan of the short grain rice in gemista or koupepia/ dolmades. I like my rice to have bite. And you don’t get that with short grain or med...

So many different ways to make these. But this is my favourite method. On the stove top low and slow. But you can prepare this the same way and cook it in the oven at 170c fan, covered for 1 hour. You can then decide if you want to uncover and cook for a bit longer. The other option is cook everything except the beans on a high heat until the sauce is ready, then add the beans and simmer for 30...
Lamb Tava - Cypriot Baked Lamb
Просмотров 3,6 тыс.3 года назад
Lamb Tava is a classic Cypriot dish. Similar versions can be found in Greece and Turkey. Tava refers to the clay pot the dish is traditionally cooked in. There are different variations on this dish some make it with rice instead of potatoes and some make it with rice and potatoes. I just use potatoes. Cumin and cinnamon are traditionally used in this recipe. Some people don’t use cinnamon in th...

Cypriot Chicken & Halloumi Pasta

Koupepia Hello :) today I’m going to show you the Cypriot version for dolmades, they are called koupepia. This is my yiayia’s recipe, most Cypriot koupepia have the same ingredients though. Hello, this recipe is inspired by tabbouleh salad. I was careful not to call it tabbouleh as I know it is not a traditional tabbouleh, and I don’t want to offend any Lebanese viewers. Chicken Tagine
Просмотров 1523 года назад
Hello :) in the video for this, I called it chicken tagine, technically it isn’t a tagine as it is not cooked in a tagine pot. So if I have offended any Moroccan viewers I apologise :) I should have said tagine style. I’m pretty sure most of the flavours I used can be used in a tagine. But either way, I hope you enjoy this Moroccan inspired stew. I have been using this recipe for years, I have ...

      I can’t really explain, it’s how we’ve always made it. A lot of savoury Cypriot pastries have orange juice in the mix. I think it’s more of a background note than a prominent flavour.

    Your klimatifilla are out of a jar. Definitely not traditionally Cypriot. We have vines in our garden and cut the leaves regularly to make koubebia whenever we want. They freeze well too! Jarred leaves don't taste as nice and you're supposed to cook the meat first before you roll them and cook them.

    • @chrispcooks2909
      @chrispcooks2909 11 месяцев назад

      Who defines what tradition is? My yiayia never cooked the filling. So for me this is traditional, and you will find many Cypriot who don’t cook the filling. As for the leaves, I live in London without a garden so as is traditionally Cypriot, you make the best of what you have 😊. These vine leaves are the softest you will get, I get them from a Greek shop at Borough market. So they aren’t from my garden sadly, but I can’t do anything about that 😊

    • @chrispcooks2909
      @chrispcooks2909 11 месяцев назад

      That is some people’s preference, but I have always cooked them this way as that is how my yiayia did them. It has never been dangerous. I cook them for at least an hour and then let them sit in steam. They will definitely be cooked through if that was your concern.

      I’m not convinced there’s that much difference whether it’s Greek or Turkish. The difference is whether it’s the fresh (rubbery) stuff in plastic or the traditional stuff that is flakier, saltier and has much better flavour. The traditional halloumi is made on both sides of the divide and is equally delicious.

      Sometimes mine is a little wet, but I don’t mind that. Usually it’s if I haven’t left it to stand and steak cook at the end long enough. I always try and leave it now for 15-20 mins. Alternatively, you could use a bit less water. But then just make sure you do let it stand at the end to ensure it steam cooks through.
