      If you are at a higher elevation, you could try lowering the gelling point temperature by a degree per 500 ft above sea level and see if that is more to your liking. Otherwise perhaps you prefer a softer set soft spread (Jam) and adjust as necessary to your preference. Thanks for Watching!

    Do you have to Waterbath the jars?

      The jars need to be clean prior to use; running them through the dishwasher prior to use works well. Otherwise, yes, the Blackberry Jam should be Water Bath Canned as mentioned in the video in order to make sure it is shelf stable. Happy Canning & Thanks for Watching!

    Thank you for doing this video. I just tried taffy, and dried it at 140 for 4 hours. It puffed up and had a great texture. Put it immediately into airtight containers...and within the hour it had shrunk back to a gooey mess. Any suggestions would be appreciated! I am new to this and we are getting really frustrated with candy not turning out. Thank you!

      Make sure your Freeze Dryer is entering into Candy Mode (High Temperature Mode with Candy Process Button Pressed Green) and I would make sure your airtight containers are sealed nicely. The humidity of where you store the candy can sometimes seep into storage containers, especially if your house is really humid. Cellophane bags, for instance, will only last a few hours in a really muggy environment and make the candy sticky. I only will transfer to those such bags on the day of a party or when I give them as favors etc. I have not had the issue you mentioned above, and the taffy is still nice and crunchy a few months later in the containers I used in the video. Did you cut the Taffy into quarters like in the video? If the candy was whole and freeze dried really big, the center may have not been dried all the way through. I'm not sure what else could have caused the results you are experiencing. You could also contact the manufacturer of your machine, and they may suggest a Firmware update or troubleshoot you through some things. I hope this helps and Thanks for Watching!

    I appreciate this video. I just ordered my Presto Electric Pressure Canner last night and am eager for its arrival. I'm in my 70's. Pressure canning used to be a hassle when my husband and I had a half acre garden and four children at home. Because we live at an altitude of 6000', it was essential to do everything exactly right: having my pressure gauge tested annually by the extension office and then closely monitoring the entire pressure canning process watching the gauge to ensure the pressure remained just right. Needless to say, I gave up pressure canning some years ago and occasionally glance at my old, huge pressure canner gathering dust on a shelf in our garage. 😄 I'm eager to pressure can foods I've never tried before. One of my first goals will be to try red potatoes because we love making Ranch Potatoes [Pressure cook on the stove in my small Presto pan the potatoes cut in chunks with the skin still on. Drain, and add one chopped onion. Then stir in Ranch salad dressing and bacon bits and bake for about 45 minutes.) I'm thinking being able to open a quart or two of pressure canned red potatoes will allow me to make this recipe all year long rather than just in summer months plus prepare it more quickly. QUESTIONS: 1. Do you think it will work ok to leave the skins on the red potatoes? [Obviously, I always scrub them prior to cutting the potatoes in chunks.] 2. Would you still advise 10 minutes of parboiling time on the stove prior to adding the potatoes to the jars, OR would you think it might be prudent to add a bit more time because of the skins?       Hello! I would suggest peeling & parboiling the potatoes to help keep a consistent result.       @@TheHomeinHomestead Thank you for taking the time to write this reply and include the link. I read the linked article but noticed it was published in 2014, saying they "do not know of research done of canning potatoes with peels left on." I then read a highly-recommended, more-recently published, canning cookbook that says red potatoes can be cut in small chunks [same 1-2" size mentioned in the article] but doesn’t say to remove the scrubbed skins. No specific sources were cited. Next, I called my local extension office. The food/nutrition agent has many years of experience and concurred, that for many years, the recommendation has been to remove all potato skins. We talked through options of skins/no skins on red potatoes cut into 1-2” cubes. Our net analysis of the physics/chemistry/biology aspects of pressure canning: we both concurred that while it might be safe to thoroughly process well-scrubbed potato skins, they would most likely require additional processing time which means the potato portion would be mush by the time the skins are safe. I deeply appreciate that you and I share the value of doing things according to proven, tested methods. When I was age 10, a family in our state suffered a tragedy. The grandmother served improperly pressure-canned green beans at a family event. She lost her husband, her married son, and a grandchild to botulism poisoning, plus some other family members were very ill. That left an indelible imprint on me to do things the right way! REGARDS!

      Hi! I haven't grown lettuce in my 5-Tier Planter myself, so I couldn't say. I did find a great planter for growing lettuce in though!     I made cherry jam and my recipe called for lemon juice and original powdered pectin ; I did not know about the temp 220 I’m worried that they look more like syrup than jam now they are done and sealed ; I don’t think they set ? Can I remove the jam and reboil it and water bath again ?

      With the added Pectin, there is a good chance it will still set. That is another ingredient that helps with the gelling process and when not used, the Gelling Point is really important. You can open a jar and see if the jam is set to your liking. If not, you could chalk it up to a learning experience and enjoy the softer set spread as a Cherry Sauce over Ice Cream or poured over baked goods. I would give it a try first; it might be just fine!     I just started canning three days ago!! Just water bath canning for now. I’ve been planning on canning baked beans, which is one of my favorite foods!! How do you thicken up the sauce? If you leave it like it is, it’s more of a baked bean soup! Also, I think you should can your left over sauce! It looks delicious!! ❤❤❤ blessings to you!

      That's great! Have fun canning :) When I go to prepare my Baked Beans for eating, I will either heat them in a Saucepan & maybe add some BBQ Sauce if I want a spicy flare. Or I place them in a Baking Dish (sometimes adding some bacon strips) and bake in the oven until a nice, thick baked bean result! Thanks for Watching!

    Loved your video! I have a Carey canner I bought last fall...I love it and your presto is very nice! Canning with electric is so much easier...In fact I'm going to can some of the northern beans tomorrow..

      This is not a recipe for canning, this is a recipe for making a Breakfast Sausage Substitute. The Sage helps to mimic the flavors of a Breakfast Sausage really nicely and then you can use Beef for creating Breakfast Sausage for recipes!     This is a dish that I am surely surely going to be crazy about, and I can't wait to try it! I love cooking in a slow cooker and there's just not enough pasta in this world for me. If you have leftovers... what would be the best way to reheat it the next day, and is that even possible to do so? Thanks for your lovely instr. 😊. Also, if you're cutting the recipe in half should you also cut the time it Cooks in half, or is it the same time frame? 😊

      It is nice to have Homemade Canned Baked Beans instead of buying the store-bought Baked Beans in the Can.     Are there any mods I could make to use non-dried frozen tart cherries? I’m so frustrated trying to find a recipe! I have tons of frozen pitted cherries. They have a lot of moisture :(

      You could make a Cherry Sauce & add that to Thumbprint Cookies (Sugar Cookies with an indent in the middle). Or you could give the Dark Chocolate Cherry Cookie Recipe a shot, after letting the frozen cherries defrost overnight in the refrigerator and letting them drain really well, then squeezing out the excess moisture with a paper towel. Otherwise, Frozen Cherries work great in Jam or Cakes!
